Hi Melissa, I really enjoyed making the cookies and they turned out well. I’ll probably make them a bit smaller next time though & I used ground hazelnuts instead of almonds.
However, on the subject of preparing chocolate, I raise my cacao & have always done the fermentation method & drying (in my oven with only the pilot light). I went out and got a dehydrator to try this new idea. It was on 24 hours and still not dry. That is an unacceptable use of energy. I tried to finish the process on racks in the oven, but they were still sticky after a week & I threw them out. What is missing here?
