From the Tropics: Harvesting Watercress in Boquete, Chiriqui edit

Berro1Thank you Mother and Father Nature for all the blessings, and today, specially for the gorgeous watercress.

A couple of months ago, Ms. Dayra, the lady in charge of the Purchasing Department at Valle Escondido Resort & Spa, took me on a garden tour and showed me where the watercress grows in the property. This was my first encounter with this precious leaf in the wild, it was oh-so-green, it was almost poetic.

By now I THINK you know how in love I can get in the kitchen with some ingredients--- Sometimes it is because they are new to me, sometimes its because they are good for Us -health matters-, other times it's because they are a "piece or art," the design and colors are marvelous, or maybe they are just versatile, totally, you could do almost anything with them.

Watercress is a fantastic leaf packed full of love, nutrients and color. its distinctive flavour suits a variety of different dishes, from beef, birds, fish and stir fries to soups and salads.

Berro3We have in our menu some innovative offerings made with it..., nothing too complicated, they just are deliciously green..., period. For example, we serve a very good looking "Hamburguesa de Berro en Pan Foccacia," or "Watercress Hamburger in Foccacia Bread," it is a juicy patty made with the best quality ground beef blended with watercress and with some watercress butter in the middle! Yum--- What can I say about the focaccia bread, ohh well, we make it fresh in our ovens and its fantastic. This burger comes with a watercress salad on the side.
